        Hired Mark for some work on very short notice, he came in for a weekend and kept very good communication up until the point of arriving at the hotel, to keep me at ease. Although it was only a quiet weekend he handle it with absolute professionalism and delivered exactly what was expected. I met Mark on the Friday night, before the two shifts he did for me on the weekend. I had was in situation where Mark had to come in and basically run the kitchen over the period of two days. Without knowing anything about the menu or kitchen procedures. He handled this. The customers whom he had feed (one party was a function) had nothing but compliments. Exceptional chef with abundance of talent. Would fully recommend Jed Stout, Head Chef. The Dower House Hotel.
