The gift shop could do with being designed as a one way system maybe.
Walk through, grab your tickets and instructions, then on to the caves.
Then on your return, a different entrance or route, away from the incoming, so you can browse gifts in their shop.
The coffee shop want really inspiring, maybe a revamp with a more inviting entrance, instead of two people taking, sitting on the only seats instead of serving.
Or maybe I'm missing something with service, sorry if I am!
Staff in the gift shop were informative and friendly.
