    I would like to review one of Mariellas cookery courses at Honest School, Newbury called AMALFI COAST ON THE TABLE. To be taught by an exceptionally gifted cook in such a place is such a treat. Firstly, we made a Limoncello, the Italian lemon liqueur, which is served in ice cold glasses. It can be drunk either after a meal or put on ice cream or in desserts. Secondly, we were taught to cook Parmigana di Melanzane using typical Neopolitan ingredients. It is a delicious and colourful dish made from aubergines, mozzarella, parmigiano, basil and a light tomato sauce. Thirdly, Pizza Margarita Napolitana - Mariellas favourite dish. Hers is a simple but most exquisite pizza recipe. Instead of rolling out the dough, Mariella showed the secret of folding it several times. I`ve never eaten a better one. Next, we learnt how to make Crispolini or ravioli al Ravellese - another special dish from Ravello and related to cannelloni. Finally, we cooked a fantastic prawn risotto. We were shown how to prepare a prawn/vegetable stock. It was really quick to make and helped the risotto to taste marvellous. It is always a wonderful experience to participate on a cookery course by Mariella Bliss. An Italian lady who teaches you by putting her heart and soul into her country`s cuisine.
