I attended a few courses purely because Corinne Payet is an exceptional cook and teacher! There is the structured approach to the class itself (Macaron masterclass) and the free flow of information on how to tweak the recipe for the adventurous. My second class was a Pastry Masterclass, Sweet and Savoury. The demonstration was a confidence booster for the timid hearted. Corinne was encouraging and generous with her wealth of knowledge when I attended a 1:1 class on how to take a dish to the next level through various cooking methods using a combination of store bought ingredients no less. The testament to Corinnes culinary culture of extracting maximum flavour through methodology of cooking, translated in converting a petulant fussy eight year old into appreciating Corinnes home cooked burger on freshly baked brioche. He equally polished his plate of hand made pasta with Corinnes tomato sauce (her secret recipe). I shall not elaborate on techniques nor spill Corinnes kitchen secrets, as you just have to attend her classes. Honestly, replicate the dishes at home, sit back and absorb the praises from appreciative dinner guests and family. Be adventurous! Give it a go!!

One Two Culinary Stew
Corinne's cakes and ptisserie are fantastic. The passion fruit tart is one of the best things ever! So happy she is doing ptisserie boxes at the moment. Last year I attended Gourmandises Acadmie's Pastry Masterclass in Corinne's spacious kitchen. She is a great instructor. I also enjoyed several of her homecooked dinners at Le Bistrot Clandestin supperclub in her home.

Corinne made us a black forest gateau for Christmas. It was exceptional. I have to say it was the best cake I have had in decades, and I have eaten a lot of cake over the years! Presentation and taste were equally wonderful. Will be buying again and already recommending Corinne widely.

Corinne's patisserie is amazing!! so tasty, definitely more than just a cake. The attention to details in the presentation is stunning too. Oh and if you are in for a class, you will have great fun, she is so friendly!
