        I don't know what Dairy Crest are putting in their 'Cathedral City' cheddar cheese but., whatever it is, if you leave it out of the fridge (as you should be able with any 'real' cheddar') it quickly turns a nasty shade of orange and becomes unattractively sweaty. It also leads to nasty outbreaks or acne.
